Food Protection Manager’s Certification

ServSafe is administered by the National Restaurant Association:“We understand the importance of our program in teaching and certifying responsible food service measures. We stay on top of the various and changing regulatory requirements for every state and ensure that our certifications will prepare you to implement essential food safety practices and create a culture of food safety.”This course will take place over 2 days; the first day and a half will be presentation and study of the materials, with breaks and lunch provided. The last part of the second day will be the test portion. Upon completion of the class and and a passing exam score of at least 75%, students will receive their ServSafe certification, good for 5 years. Class cost includes 2-day in-person instruction, use of manual, one exam sheet, and proctored exam. Students must receive a passing score of 75% or higher to receive ServSafe certification. Appropriate for ages 17 and up.
Basic Knife Skills
with AMY MCNELIS-LUNN
Hone your cutting skills--safely. We’ll practice different cuts and techniques on a variety of vegetables and then send you home with the makings of a fine soup and new outlook on kitchen preparations. Supply fee of $35 for knife, sharpening stone, cutting board and food payable to instructor at the first class. Please register by the end of the day, Sunday, before the class so that the instructor has all necessary supplies.Appropriate for minors ages 12-18 with an accompanying adult.
NEW! Extended Knife Skills: Produce & Herbs
If you’ve already taken the Basic Knife Skills class, come on back to learn some new tips and tricks! This time we’ll feature fruits, vegetables and herbs while we prepare a bruschetta appetizer, a salsa and a colorful fruit salad with mint, while practicing some of the techniques practiced in professional kitchens. Please bring your cutting board, knife and sharpener from Basic Knife Skills to class with you. Supply fee of $20 for foods payable to instructor at the first class. Please register by the end of the day, Sunday, before the class so that the instructor has all necessary supplies.
